Receta de Chutney de Bananas
Sabores del oriente
El chutney es un acompañamiento que típicamente se sirve con un plato de curry. Pero también se puede agregar al arroz, brócoli al vapor, o batatas hechas al horno. Hasta se puede usar en vez del ketchup en un sandwich. Hoy vamos a hacer un chutney especial porque está hecho de bananas y combina, como todos los chutney, el dulce con el ácido y también un poco de picante.
Chutney de banana
Rinde: 6 porciones
Ingredientes:
- 3 cucharadas de aceite de coco u oliva
- 1 cucharada de canela
- 1 cucharadita de cardamomo molido
- 1 cucharadita de jengibre fresco rallado
- 2 chiles pequeños, picados fino
- 2 clavos de olor
- 4 bananas grandes, peladas y cortadas en rodajas finas (entre 5 mm y 1 cm)
- 2 cucharadas de azúcar mascabo
- 2 cucharadas de vinagre de vino blanco
- ½ taza de agua
Ingredientes del chutney de banana
Procedimiento:
Calentar el aceite en una olla. Incorporar el cardamomo, los clavos, la canela, los chiles y el jengibre. Cocinar 20 segundos revolviendo constantemente.
Subir el fuego y agregar las bananas. Cocinar 3 minutos revolviendo cada tanto.
Agregar el azúcar, el vinagre y si fuese necesario, el agua. Tapar y cocinar 10 minutos a fuego bajo. Destapar y cocinar 3 minutos más.
Servir como acompañamiento caliente o frío.
