De acuerdo a una investigación científica japonesa, la banana completamente madura con manchas oscuras sobre la cáscara, produce una sustancia llamada “factor de necrosis tumoral” que tiene la capacidad de combatir las células anormales.
Cuanto más madura es la banana, mejor es su capacidad anti cancerígena. La banana con manchas oscuras es más alcalina y ocho veces más eficaz en la mejora de las propiedades de los glóbulos blancos de la sangre que cuando está en su estado verde.
Comer de 1 a 2 bananas al día te aumentará tu inmunidad.
El proceso de maduración de la banana
A medida que la banana madura de forma correcta, bajo condiciones cuidadosamente controladas, la cáscara se vuelve de un tono más claro y puede llegar al típico color amarillo. Durante este proceso, el almidón se convierte en azúcar y la pulpa se hace más blanda, lo que hace que esta fruta sea dulce y apetitosa.
Aunque una banana parcialmente verde se puede consumir con total seguridad, esta fruta no alcanza su estado óptimo de madurez hasta que aparecen manchas marrones en su cáscara. En la etapa en la que se vuelve marrón, la mayor parte del almidón se ha convertido en azúcar y el nivel de dulzura es el mayor. El mejor momento para consumir una banana es, de hecho, cuando mucha gente piensa que ya ha comenzado a pudrirse.
Las bananas se conservan mejor a temperatura ambiente, al aire libre. Guardar las bananas en una bolsa de plástico o de papel acelera el proceso de maduración. Colocarlas en la heladera disminuye la velocidad de maduración y, por lo tanto, la fruta puede ser conservada durante más tiempo aunque, en este caso, la cáscara se volverá de color marrón de manera más rápida.
